Chef Angel Barreto’s culinary journey is a testament to his passion for Korean cuisine and his dedication to mastering its art. As a child of parents who served in the U.S. military, Barreto grew up with a deep appreciation for Korean food. He pursued this interest by attending L’Academie de Cuisine in Maryland, focusing initially on French cuisine before transitioning to Asian cuisine. His talent was recognized early in his career, leading him to work at The Source, Wolfgang Puck’s first restaurant venture in Washington D.C., where he quickly advanced from cook to executive sous chef.
Barreto’s exploration of Korean cuisine led him to create a highly acclaimed tasting menu at The Source. This success paved the way for his collaboration with the Fried Rice Collective and his significant role in the creation of Anju, a full-service Korean restaurant in D.C. As a partner and executive chef at Anju, Barreto has been instrumental in developing the restaurant’s menu, blending traditional Korean dishes with modern interpretations.
Despite facing challenges and discrimination (as someone who does not look like a typical student of Korean food), Barreto’s skill and creativity have earned him numerous accolades, including nominations for the James Beard Foundation Award and recognition as one of Food & Wine’s Best New Chefs in America in 2021. His commitment to excellence and innovation in Korean cuisine is evident in Anju’s diverse and dynamic menu, which has garnered both critical acclaim and a loyal following.
