Carlos Delgado

Chef Carlos Delgado was raised in Lima, Peru where daily family cooking was part of his cultural tradition. Delgado’s cooking philosophy revolves around the fusion of traditional Peruvian flavors with Chinese and Japanese influences, a reflection of Peru’s diverse culinary history. He emphasizes the importance of fresh, quality ingredients and a deep respect for the cooking process. As Head Chef at China Chilcano, Delgado showcased the fusion of these cultures.

The pandemic scuttled Delgado’s original plans for the space at Blagden Alley in Washington D.C. But, once he finally launched the twin restaurants of Causa and Amazonia, on adjacent floors of the building, his concept found an audience and earned him a Michelin star.
